Winemaking: Indigenous yeast fermentation with 100% whole cluster, in small stainless steel vats, nothing was added to the wine but sulphur. Total maceration of 25 days. Ageing of 16 months in 500L French oak barrels. Mono C is from the Region Baixo Corgo of the Douro Valley, the type of soil is clay loam soil with predominance of yellow slate.
Taste: Castelão is a short cycle varietal, with soft tannins very open color like other more oxidative varietals like Gamay and Grenache, when planted in the Douro Valley the resulting wine shows a good presence of tannins. For this characteristic’s meat dishes like veal, Lamb, goat, are probably the ones where the wine shows it best. But the fact that wine have rounder structure makes it easier to drink even without food
