Le Chemin des Salines is a cuvée that is produced in collaboration with Mas Mellet & Eric Pfifferling. This natural red wine consists mainly of Cinsault with a little Grenache. After the manual harvest, the sorting takes place on the property and then in the cellar. The grapes are chilled overnight and then placed in a vat by gravity. It macerates for 5 days and then gravity destroys it. The juices are pressed and flowed in old barrels that are more than 10 years old. The wine ages in concrete barrels.

In 2002, when Emilie and Brice Bolognini were barely over 20 years old, they decided to take over the Mas Mellet estate in Gallicia in the Gard. At the time, it was 27 hectares of abandoned vines. Regardless of the work to be done, they had their first vintage in 2003.

Very quickly, the evidence of working organically led the couple to reduce the cultivated land to now 16 hectares in production. In the vineyards, manual labor takes precedence and the sheep work during the winter. Their Certification arrived in 2007.
