Winemaking: Organic, Natural Wine, The grapes are harvested by hand. No stabilization or filters used.
After a light step on the whole bunches we passed everything to the press and made a classic free-run vinification. The fermentation started in stainless steel vats and then to a 225L barrel where it finished fermenting and aged for 8 months. The must was fermented with indigenous yeasts, completed the malolactic and the wine was neither filtered nor fined.
!!!very limited - only a total production of 200 tasty bottles !!! It is a rose? white? red? or other? We like to say its all….
